Ingredients
  

  • 1 lb lean ground beef (90/10 or leaner)
  • 1 Tbsp olive oil (optional, for lean beef)
  • 0.5 cup onion, finely diced
  • 2 stalks celery, thinly sliced
  • 3 cloves garlic, minced
  • 15 oz diced tomatoes (undrained)
  • 8 oz tomato sauce
  • 1 tsp Italian seasoning
  • 5 cups low-sodium beef broth
  • 0.5 cup diced green beans (fresh or frozen)
  • salt and freshly cracked pepper, to taste
  • optional shredded sharp cheddar or fresh parsley, for topping

Instructions
 

  • Heat olive oil (if using) in a large pot over medium-high heat. Add onion and celery; sauté for 5–6 minutes until softened.
  • Add ground beef. Season lightly with salt and pepper. Cook until browned, breaking it apart as it cooks. Add garlic and sauté for 30 seconds.
  • Add diced tomatoes, tomato sauce, Italian seasoning, and beef broth. Stir well and bring to a simmer.
  • Simmer for 25–30 minutes to develop flavor. Stir in diced green beans and cook for an additional 5–10 minutes, or until tender-crisp.
  • Season to taste with salt and pepper. Serve warm, topped with cheddar cheese or parsley if desired.

Notes

Use lean ground beef to avoid excess grease and simmer long enough for the broth and tomatoes to fully infuse the soup with rich flavor.
