Equipment

  • Blender
  • Cocktail or hurricane glass
  • Shallow plates for rimming

Ingredients

  • Cocktail
  • 1.5 oz vodka
  • 1 oz blue curaçao liqueur
  • 1 oz cream of coconut (such as Coco Lopez)
  • 2 oz pineapple juice
  • 1 cup ice (or more for thicker texture)
  • Garnish
  • shredded coconut, for glass rim
  • pineapple wedge (optional)
  • maraschino cherry (optional)
  • fresh mint sprig (optional)

Instructions

  • Spread shredded coconut on a shallow plate. Moisten the rim of your glass with water, pineapple juice, or light corn syrup, then dip into the coconut to coat. For a blue effect, tint coconut with a few drops of blue food coloring and shake in a zip-top bag.
  • Add vodka, blue curaçao, cream of coconut, pineapple juice, and ice to a blender. Blend on high until smooth and slushy. Adjust thickness by adding more ice or juice as needed.
  • Pour the blended cocktail into the prepared glass. Garnish with a pineapple wedge, cherry, and mint sprig if desired. Serve immediately while icy cold.
