Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, mix the sliced apples with sugar, cinnamon, and lemon juice. Allow to sit for about 10 minutes.
  • In another bowl, whisk together flour, baking powder, and salt.
  • In a separate bowl, beat together buttermilk, melted butter, egg, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and stir until just mixed; do not overmix.
  • Grease a baking dish and layer the spiced apples evenly.
  • Pour the batter over the apples and spread gently to cover.

Baking

  • Bake for 35 to 40 minutes, until the top is golden brown and a toothpick comes out clean.
  • Let the cobbler cool for a few minutes before serving.

Notes

Serve warm with a scoop of vanilla ice cream for extra indulgence. Store leftovers covered for up to 3 days or freeze for 3 months.
