Ingredients
  

For the shortbread crust

  • 1 cup unsalted butter, softened Use room temperature butter for easier creaming.
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt

For the apple filling

  • 4 cups sliced apples (Granny Smith or Honeycrisp) Great options for flavor.
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice Brightens apple flavor and prevents browning.
  • 1/4 cup brown sugar

For the topping

  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup all-purpose flour

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • In a mixing bowl, cream together the butter and powdered sugar until light and fluffy.
  • Gradually add the flour and salt, mixing until a dough forms.
  • Press half of the dough into the prepared baking dish to create an even bottom crust.
  • In another bowl, toss the sliced apples with cinnamon, lemon juice, and brown sugar. Spread the apple mixture evenly over the crust.
  • In a separate bowl, mix the oats, brown sugar, and flour. Cut in the remaining shortbread dough until crumbly. Sprinkle this topping over the apple filling.

Baking

  • Bake for 40-45 minutes or until the topping is golden brown and the apples are tender.
  • Allow to cool before cutting into bars and serving.

Notes

Store any leftover bars in an airtight container in the refrigerator for up to a week. To freeze, store for up to three months. Reheat in the microwave for 15-20 seconds.
