  • 1 cup finely grated zucchini (squeeze excess moisture)
  • 1 cup peeled and diced apple (preferably sweet varieties like Fuji or Honeycrisp)
  • 1.5 cups all-purpose flour (for a gluten-free option, consider using almond flour)
  • 1 cup granulated sugar (or coconut sugar for a healthier swap)
  • 0.5 cups vegetable oil (can substitute with applesauce for lower fat)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon cinnamon (for that warm spice flavor)

Optional Additions

  • 0.5 cup chopped nuts (walnuts or pecans add a nice crunch)
  • 0.5 cup raisins or cranberries for a touch of sweetness

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper.
  • Prepare the zucchini and apple by grating the zucchini and finely dicing the apple. Make sure to squeeze out any excess moisture from the zucchini for the best texture.
  • In a large mixing bowl, combine the grated zucchini, diced apple, and vegetable oil. Stir until well mixed.
  • Add the eggs and vanilla, continuing to mix until everything is incorporated.
  • In a separate bowl, blend the flour, sugar, baking powder, baking soda, salt, and cinnamon together.
  • Gradually add the dry ingredients to the wet mixture. Stir just until combined; do not overmix. Fold in any optional nuts or dried fruit if desired.
  • Pour the batter into the prepared loaf pan and smooth the top.

Baking

  • Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. The top should be golden brown.
  • Let it cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Notes

Store your Apple Zucchini Bread in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week. You can also freeze it for up to 3 months. To reheat, simply slice and warm in the toaster or microwave until heated through.
