- 4 medium apples (Honeycrisp, Gala, or Granny Smith)
- ½ cup crumbled feta cheese
- ¼ cup dried cranberries
- 2 tbsp honey, plus more for drizzling
- 1 tbsp unsalted butter, divided
- 1 tsp ground cinnamon
- ½ tsp vanilla extract
- 1 tbsp fresh mint, chopped (optional garnish)
Preheat oven to 375°F (190°C). Lightly grease a baking dish with butter or cooking spray to prevent sticking.
Using an apple corer or small knife, carefully remove cores, leaving about ½ inch at the bottom to hold filling.
In a small bowl, mix feta, cranberries, cinnamon, and vanilla until evenly combined.
Place apples upright in prepared dish. Spoon filling into each apple, pressing gently to fit as much as possible.
Drizzle 2 tablespoons honey over apples and top each with a small pat of butter. This helps caramelize the tops while baking.
Cover baking dish with foil and bake for 25–30 minutes until tender when pierced with a fork.
Remove foil and bake uncovered for 5–10 minutes to allow light browning and deeper flavor.
Cool for 5 minutes, drizzle with extra honey, garnish with fresh mint, and serve warm.
