Ingredients
  

  • 1.5 lbs chicken, cubed
  • 1/2 cup BBQ sauce
  • 1 tsp smoked paprika
  • 4 cups romaine lettuce
  • 1 cup tomatoes
  • 1 avocado, sliced
  • 1/2 cup corn
  • 1/4 cup beans
  • 1/2 cup ranch dressing
  • 1 tbsp lime juice

Instructions
 

  • Thread cubed chicken onto skewers. Season with smoked paprika and brush with BBQ sauce.
  • Grill skewers over medium-high heat for 4–5 minutes per side until fully cooked (internal temp 165°F). Let rest for 5 minutes.
  • In a large bowl, combine romaine, tomatoes, corn, beans, and onion.
  • Whisk together ranch dressing and lime juice until smooth.
  • Toss the salad with the dressing until evenly coated.
  • Divide salad into bowls and top with grilled chicken skewers and sliced avocado. Serve immediately.

Notes
