Ingredients
  

For the pancakes

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups buttermilk You can make your own by adding a tablespoon of vinegar to regular milk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract

Preparation

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Ensure there are no lumps to achieve a smooth batter.
  • In another bowl, combine the buttermilk, eggs, melted butter, and vanilla extract. Mix these wet ingredients well to give your pancakes their delicious flavor.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. It’s okay if there are some lumps; over-mixing can lead to tough pancakes.
  • Heat a griddle or non-stick skillet over medium heat and lightly grease it with butter or cooking spray.

Cooking

  • Pour about 1/4 cup of the batter for each pancake onto the griddle. Give them space to spread a little as they cook.
  • Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook until golden brown, about another 2-3 minutes.
  • Serve warm with your favorite toppings such as maple syrup, fruit, or whipped cream.

Notes

Use room temperature ingredients for better batter consistency. Avoid over-mixing to maintain fluffiness. Keep pancakes warm in an oven set to 200°F (93°C) if making a larger batch.
