Ingredients
  

  • 6-7 Granny Smith apples, peeled, cored, and diced
  • 0.25 cup brown sugar, packed
  • 1 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • 1 cup quick-cooking oats
  • 1 cup brown sugar, packed
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp ground cinnamon
  • 0.5 cup cold unsalted butter, cut into small cubes

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a 9x9 inch baking pan.
  • In a bowl, mix diced apples with ¼ cup brown sugar, flour, and cinnamon until evenly coated.
  • In another bowl, stir oats, 1 cup brown sugar, flour, baking soda, baking powder, and cinnamon together.
  • Cut in cold butter with fingertips or pastry cutter until mixture is crumbly.
  • Press half of the crisp mixture firmly into bottom of prepared pan to form crust.
  • Spread apple filling evenly over the crust.
  • Sprinkle remaining crisp mixture over the apples as topping.
  • Bake for about 40 minutes until topping is golden and apples are bubbly.
  • Cool for 20 minutes before serving warm with ice cream.

Notes

For a variation, swap half the apples with pears for a pear-apple crisp. To make without oats, replace with extra flour and brown sugar for a more traditional crumble topping. Always use firm apples like Granny Smith, Honeycrisp, or Braeburn for the best texture.
