Equipment

  • Baking sheet
  • Parchment paper
  • Basting Brush
  • Sharp Knife

Ingredients

Essential Ingredients

  • 12 slices thick-cut bacon do not use thin-cut
  • 8 oz sharp cheddar cheese cut into 12 1-inch cubes
  • 1/3 cup BBQ sauce divided
  • 1 tbsp brown sugar
  • 1/2 tsp smoked paprika

Instructions

  • Preheat oven to 400°F and line a baking sheet with parchment paper.
  • Cut cheddar into 12 equal 1-inch cubes.
  • Lay out bacon slices. Place one cheese cube at one end of each slice and roll tightly, seam-side down.
  • Brush tops with BBQ sauce. Sprinkle evenly with brown sugar and smoked paprika.
  • Bake for 12–15 minutes, checking at 12 minutes. Bacon should be crispy and cheese starting to melt.
  • Let rest for 3 minutes before serving to avoid burns and allow bacon to crisp further.

Notes

Always use thick-cut bacon for best results—thin bacon tears and leaks cheese. If needed, adjust oven temperature slightly based on your oven's calibration.
