  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tablespoon Dijon mustard
  • Fresh parsley, chopped (for garnish)

Preparation

  • Generously season the chicken thighs with salt and pepper on both sides.
  • In a large skillet, heat the olive oil over medium-high heat until it shimmers.

Cooking

  • Add the chicken thighs, skin-side down, and cook until golden brown and crispy, about 5-7 minutes.
  • Flip the chicken and cook for another 7-10 minutes, until cooked through.
  • Check for doneness using a meat thermometer; the internal temperature should reach 165°F.
  • Carefully remove the chicken from the skillet and set it aside on a plate.

Making the Sauce

  • In the same skillet, add the minced garlic and sauté for about 1 minute, or until fragrant.
  • Stir in the heavy cream, chicken broth, and Dijon mustard, mixing well to combine.
  • Bring the mixture to a simmer and allow it to cook until the sauce thickens slightly, about 5 minutes.

Final Steps

  • Return the chicken to the skillet, coating it well in the sauce.
  • Finish with a sprinkle of fresh parsley for added brightness and serve hot.

Notes
