Equipment

  • Skillet
  • Mixing bowls
  • Whisk
  • serrated knife
  • Spatula

Ingredients

  • 4 thick slices white bread (brioche or Texas toast)
  • 2.5 Tbsp unsalted butter, softened
  • 2 tsp brown sugar
  • 1 tsp ground cinnamon (for filling)
  • 1 large egg
  • 3.5 Tbsp milk
  • 1 tsp vanilla extract
  • 2 Tbsp granulated sugar
  • 1 tsp ground cinnamon (for coating)
  • 1 Tbsp butter (for frying)
  • 2 Tbsp cream cheese, softened
  • 3 Tbsp powdered sugar
  • 1 tsp milk or melted butter (for dip)

Instructions

  • Mix softened butter, brown sugar, and cinnamon until smooth.
  • Trim crusts from bread. Spread cinnamon butter on one slice and top with another to form a sandwich. Repeat with remaining slices.
  • Cut each sandwich into 9 equal squares using a serrated knife.
  • Whisk egg, milk, and vanilla in a shallow bowl.
  • Melt butter in a skillet over medium heat. Quickly dip each bite into custard and cook 1–2 minutes per side until golden brown.
  • Immediately toss warm bites in cinnamon-sugar mixture until fully coated.
  • Whisk cream cheese, powdered sugar, and milk until smooth. Serve bites warm with dip on the side.

Notes

Use slightly stale bread for best texture and avoid over-soaking the bites in custard. Toss in cinnamon sugar while still warm so the coating adheres properly.
