- 4 cups fresh corn kernels (or frozen, thawed)
- 1 cup heavy cream
- 3 tablespoons unsalted butter, divided
- 1 teaspoon salt
- 1/2 teaspoon black pepper, freshly ground
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped green onions
Preheat oven to 350°F (175°C). Lightly grease a 9x9-inch or 2-quart baking dish with butter or cooking spray.
In a large saucepan, melt 2 tablespoons butter over medium heat. Add corn kernels and cook for 5 minutes until slightly softened and golden.
Pour in the heavy cream, stirring constantly until thickened slightly. Season with salt and pepper to taste.
Remove from heat and stir in grated Parmesan cheese until melted and creamy.
In a small bowl, combine breadcrumbs with 1 tablespoon melted butter and mix well to coat evenly.
