Ingredients
  

For the chicken

  • 1 pound boneless, skinless chicken breasts

For the pasta

  • 12 ounces pasta (like rotini or penne)

For the sauce

  • 1 cup frozen mixed vegetables
  • 1 can cream of chicken soup
  • 1 cup chicken broth Use low-sodium for a healthier option.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese

Preparation

  • In the Crock Pot, add the chicken, pasta, mixed vegetables, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper. Stir to combine well.

Cooking

  • Cover and cook on high for 3-4 hours or low for 6-8 hours, until the chicken is fully cooked and tender.
  • Once cooked, shred the chicken directly in the pot using two forks until it’s in bite-sized pieces, then stir in the shredded cheddar cheese until melted and well combined.
  • Serve warm, and enjoy your hearty dinner!

Notes

For added flavor, sear the chicken in a skillet before adding it to the Crock Pot. For a creamier texture, add an extra can of cream of chicken soup or a splash of heavy cream at the end.
