For the Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 can 16 oz salsa
  • 1 packet taco seasoning

For Serving

  • 1 cup shredded cheese (optional) Optional topping
  • Chopped cilantro (for garnish, optional) Optional garnish

Instructions

Preparation

  • Layer the Chicken: Place the chicken breasts in the bottom of the slow cooker, allowing them to lie flat for even cooking.
  • Add the Goods: Pour the black beans, corn, salsa, and taco seasoning over the chicken. Ensure everything is evenly distributed.
  • Mix it Up: Gently stir everything together to combine the ingredients well and coat the chicken with the salsa mixture.

Cooking

  • Slow Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.
  • Shred the Chicken: Using two forks, shred the chicken directly in the slow cooker, mixing it with the flavorful sauce.
  • Cheese it Up: If desired, sprinkle shredded cheese on top and let it melt before serving.
  • Serve: Dish the fiesta chicken into tacos, over rice bowls, or as a topping for nachos, garnished with fresh cilantro.
