Ingredients
  

For the Roast

  • 4 pounds chuck roast Ideal for slow cooking
  • 4 pieces carrots, chopped
  • 4 pieces potatoes, chopped
  • 1 piece onion, quartered
  • 4 cloves garlic, minced

For the Broth

  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Optional

  • Flour for gravy (if desired)

Instructions
 

Preparation

  • Place the chuck roast in the slow cooker. Allow it to sit for a moment while you prep the vegetables.
  • Add the carrots, potatoes, onion, and garlic around the roast.

Cooking

  • In a bowl, mix together the beef broth, Worcestershire sauce, thyme, salt, and pepper. Pour this mixture over the roast and vegetables.
  • Cover and cook on low for 8 hours or until the meat is tender.
  • For the optional gravy, remove the roast and vegetables after cooking. Use the remaining juices in the slow cooker and thicken them with flour on the stovetop if desired.

Serving

  • Serve the pot roast with vegetables and a generous spoonful of gravy.

Notes

For best results, sear the chuck roast before placing it in the slow cooker. Customize vegetables to your liking, and store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
