Crockpot French Dip Sandwiches

These Crockpot French Dip Sandwiches are the ultimate set-it-and-forget-it comfort food. A beef roast slow-cooks in a rich, savory au jus until melt-in-your-mouth tender, then gets piled onto toasted rolls with melted cheese and served with warm dipping juices.

Ingredients
  

  • 3–4 lb beef roast (chuck or rump)
  • 2 cups beef broth, low sodium
  • 0.5 cup soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 4 cloves garlic, minced
  • 1 medium onion, sliced (optional)
  • 1 bay leaf
  • 6–8 hoagie or French rolls
  • 8 slices provolone or Swiss cheese

Instructions
 

  • Place the beef roast into the slow cooker. Leave the fat cap on for flavor if desired.
  • Whisk together the beef broth, soy sauce, Worcestershire sauce, garlic, rosemary, and thyme.
  • Pour the liquid over the beef. Add sliced onion and bay leaf. Cover and cook on Low for 8–10 hours or High for 5–6 hours.
  • Remove the beef and either thinly slice against the grain or shred with two forks. Return meat to the juices to keep warm.
  • Preheat the broiler. Split rolls, top with cheese, and broil 1–2 minutes until cheese is melted and bread is toasted.
  • Strain the cooking liquid into small bowls. Fill rolls with beef and serve with warm au jus for dipping.

Notes

For deeper flavor, sear the roast before slow cooking if time allows. Use sturdy, crusty rolls so they hold up when dipped. Strain the au jus before serving for a cleaner, restaurant-style presentation.
