Ingredients

For the Meat Mixture

  • 1 pound ground beef or sausage
  • 1 onion, diced
  • 2 cloves garlic, minced

For the Broth and Sauce

  • 1 jar 24 ounces marinara sauce
  • 4 cups beef or chicken broth

For the Noodles and Cheese

  • 8 ounces lasagna noodles, broken into pieces
  • 1 can 15 ounces ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Additional Seasoning

  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

Preparation

  • In a large skillet, cook the ground beef or sausage over medium heat until browned. Drain excess fat to keep the soup from becoming greasy.
  • Add the diced onion and minced garlic to the skillet and sauté until soft and fragrant, about 2-3 minutes.
  • Transfer the meat mixture to the Crockpot, ensuring all that flavor is enjoyed in your soup.
  • Stir in the marinara sauce, broth, and broken lasagna noodles, mixing well to combine everything.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • About 30 minutes before serving, gently stir in the ricotta cheese for that creamy texture.
  • Just before you're ready to serve, stir in the mozzarella and Parmesan cheese until melted and bubbly.
  • Season with salt and pepper to taste, and garnish with fresh basil or parsley for a pop of color.

Notes

For the best flavor, season your meat with Italian herbs during cooking. Consider adding chopped spinach or zucchini for more nutrition. For a gluten-free option, use gluten-free lasagna noodles or zucchini noodles. To make it creamier, add cream or a splash of milk.
