Crockpot Marry Me Chicken

Ingredients
  

For the Chicken

  • 2 lbs boneless, skinless chicken breasts (about 4 large breasts)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder

For the Sauce

  • 4 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes in oil (drained and chopped)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese (freshly grated is best)
  • 1/4 cup fresh basil (chopped)

Preparation

  • Pat the chicken breasts dry. In a small bowl, mix together salt, pepper, garlic powder, and onion powder. Rub the seasoning all over the chicken.
  • Place the seasoned chicken in the bottom of a 6-quart slow cooker. Top with the minced garlic and chopped sun-dried tomatoes. Pour the chicken broth around the chicken.

Cooking

  • Cover and cook on LOW for 3-4 hours or HIGH for 2-3 hours, until the chicken is tender and cooked through.
  • Shred the chicken in the crockpot using two forks. You can also remove it, shred it, and return it to the pot.
  • Stir in the heavy cream and grated Parmesan cheese until the sauce is smooth and the cheese has melted completely.
  • Turn off the slow cooker and stir in the fresh basil. Let it sit for 5-10 minutes to allow the sauce to thicken slightly. Serve hot.

Notes

For best results, consider searing your chicken before placing it in the slow cooker. A dairy-free option can be made by substituting coconut cream for heavy cream and nutritional yeast for Parmesan. You can also swap the chicken for hearty vegetables and use vegetable broth.
