This Crumbl Caramel Apple Cookies recipe is a decadent copycat of the famous bakery’s fall favorite. With a soft apple spice cookie base, caramel cream cheese frosting, buttery streusel, and fresh apple topping, each bite tastes like autumn in dessert form.
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Make the streusel: In a skillet, melt cubed butter over medium heat. Remove from heat and stir in flour, sugar, cinnamon, and salt until clumps form. Return to heat, stirring until golden and toasty. Transfer to a plate to cool completely.
Cream butter and sugars together until fluffy. Beat in egg, apple juice concentrate, and vanilla.
In a separate bowl, whisk together flour, spices, baking soda, baking powder, and salt. Gradually add to wet mixture, mixing until just combined.
Use a 1/4-cup scoop to portion dough into 9 large balls. Place on baking sheet and bake 12–15 minutes until edges are set. Cool completely on sheet.
Make frosting: Beat cream cheese and butter until smooth. Add powdered sugar, caramel sauce, and vanilla. Whip until light and fluffy.
Frost cooled cookies generously. Sprinkle with streusel, garnish with chopped apple, and drizzle with caramel sauce. Serve immediately.
Notes
Best served the same day they are assembled. Store leftovers in the refrigerator because of the cream cheese frosting and fresh apple topping.
