For the Cheesecake Filling

  • 1 cup cottage cheese smooth and creamy
  • 1 cup Greek yogurt plain, for added protein
  • 1/4 cup honey or maple syrup adjust sweetness as desired
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice for a hint of freshness

For the Topping

  • 1 cup Fresh fruits strawberries, blueberries, or cherries—your choice!
  • 1/2 cup Crushed graham crackers or granola for added crunch

Preparation

  • In a blender or food processor, combine the cottage cheese, Greek yogurt, honey or maple syrup, vanilla extract, and lemon juice. Blend until smooth and creamy.
  • Taste your mixture and adjust the sweetness if needed. If you prefer it sweeter, add a little more honey or maple syrup.
  • Take your serving jars or cups and spoon the cheesecake filling into them, filling each jar about two-thirds of the way.
  • Top each jar with fresh fruits and a sprinkle of crushed graham crackers or granola for that delightful crunch and color.
  • Place the jars in the refrigerator for at least 20 minutes before serving to allow the flavors to meld together.

Notes

These jars can be kept in the refrigerator for up to 3 days. Store the filling separately from the toppings to maintain freshness. Can be frozen in airtight containers for up to a month, but leave off any fresh fruit until after thawing. For a dairy-free version, substitute cottage cheese and yogurt with non-dairy alternatives. Consider baking a cheesecake in an air fryer for a warm dessert alternative.
