Ingredients
  

For the Jam

  • 2 pounds fresh strawberries, hulled and sliced Best if ripe for optimal sweetness.
  • 1 to 2 pieces jalapenos, finely chopped Adjust for spice preference.
  • 4 cups sugar
  • 1/4 cup lemon juice
  • 1 package pectin (like Sure-Jell)
  • 1/2 cup water

Preparation

  • In a large pot, combine the sliced strawberries, chopped jalapenos, and water. Cook over medium heat until the strawberries release their juices, stirring occasionally.
  • Stir in the sugar and lemon juice, bringing the mixture to a rolling boil. The sugar should dissolve completely.
  • Add the pectin to the boiling mixture, stirring consistently for 1-2 minutes until the jam thickens and coats the back of a spoon.
  • Remove from heat and carefully ladle the hot jam into sterilized jars, leaving about 1/4 inch of headspace at the top of each jar.
  • Wipe the rims of the jars clean to seal them properly before placing the lids on.
  • Process the jars in a water bath for 10 minutes to ensure a proper seal and longevity for your jam.
  • Let the jars cool completely at room temperature before storing.

Notes

Store in the refrigerator for up to one month, or in the freezer for up to a year. For reheating, place a jar in a warm water bath or microwave for a few seconds.
