Ingredients
  

For the Soup

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups fresh spinach

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the onion, carrots, and celery; sauté until the vegetables are softened, about 5 minutes.
  • Stir in the garlic, zucchini, and bell pepper; cook for an additional 3-4 minutes until they begin to soften.
  • Add the vegetable broth, diced tomatoes, thyme, and basil. Bring everything to a boil.
  • Reduce heat and let simmer for 20 minutes.
  • Stir in the spinach and cook for another 5 minutes until wilted.
  • Season with salt and pepper to taste before serving.

Notes

For best results, use fresh herbs. You can substitute seasonal vegetables and add beans for extra protein. This soup also freezes well for up to 3 months.
