Ingredients
  

  • 340 g top sirloin, cut into 1–1½ cm cubes (about ¾ lb)
  • 1 Tbsp olive oil
  • 2 Tbsp butter
  • 1 large onion, chopped
  • 2 medium carrots, peeled and chopped
  • Salt and freshly ground black pepper, to taste
  • 2 cups apple cider (not vinegar)
  • 1/2 cup beef broth
  • Optional: 1 bay leaf or a sprig of fresh thyme for aroma
  • 6 large potatoes, peeled and chopped
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese, shredded
  • 3 Tbsp chives, finely sliced
  • Salt and pepper, to taste

Instructions
 

  • Heat olive oil and butter in a heavy pot over medium-high heat. Season beef with salt and pepper, then brown on all sides for 6–8 minutes. Browning builds deep flavor — don’t rush this step.
  • Add the chopped onion and carrots to the pot. Cook for 4–5 minutes until the onions are translucent. Pour in apple cider and beef broth, scraping up browned bits from the bottom for extra flavor.
  • Bring to a gentle boil, then reduce to low heat and cover. Simmer for 1–1½ hours, stirring occasionally, until beef is tender and sauce has thickened. Add bay leaf or thyme if using, then discard before serving.
  • While the stew simmers, boil the potatoes in salted water until tender. Drain, then mash with milk and sour cream until smooth. Stir in shredded cheddar until melted, then fold in chives. Season with salt and pepper.
  • Spoon a generous portion of cheddar mashed potatoes onto plates or bowls. Ladle the apple cider beef stew over top. The creamy mash will soak up the cider-rich sauce beautifully.
