Ingredients

For the Macaron Shells

  • 100 g almond flour
  • 100 g powdered sugar
  • 75 g egg whites (about 2-3 large eggs) Let egg whites sit out overnight for best results.
  • 50 g granulated sugar
  • to achieve desired hue none Red gel food coloring

For the Filling

  • as needed none white chocolate (for decoration)
  • to taste none sugar cookie buttercream filling (mix butter, powdered sugar, and vanilla extract) Ensure butter is softened.

Instructions

Preparation

  • Preheat the oven to 300°F (150°C) to ensure it’s hot enough for baking the macarons.
  • In a bowl, mix almond flour and powdered sugar until well combined, ensuring there are no lumps.
  • In a separate bowl, whip egg whites until soft peaks form. Gradually add granulated sugar while continuing to whip until stiff peaks form. This will give the macarons their signature texture.
  • Gently fold the almond mixture into the whipped egg whites until combined. Add red gel food coloring to achieve the desired color, being careful not to deflate the mixture.

Baking

  • Using a piping bag, pipe the mixture onto a baking sheet lined with parchment paper, creating perfect circles about 1.5 inches in diameter.
  • Let them rest for 30 minutes until a skin forms on the surface; this is crucial for developing the macaron’s 'feet.'
  • Bake for 15-18 minutes or until they have risen and developed a slight gloss. Let them cool completely on the baking sheet.

Filling

  • While the shells cool, prepare the sugar cookie buttercream by mixing softened butter with powdered sugar and vanilla until smooth and creamy.
  • Once the macaron shells are cool, pipe the buttercream onto half of the shells and sandwich with the other half.
  • Decorate the top with melted white chocolate to create Santa's face, adding little details to enhance the festive look.

Notes

Store your Santa Claus Macarons in an airtight container in the refrigerator for up to a week, or freeze for up to two months. For best results, measure ingredients accurately and avoid overmixing the batter.
