For the pancakes

  • 1 cup all-purpose flour You can substitute half with whole wheat flour for a healthier option.
  • 2 tablespoons sugar
  • 2 teaspoons baking powder Let the batter rest to activate.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk Regular milk with vinegar can be a substitute.
  • 1 large egg Ensure butter isn’t too hot when mixed.
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Preparation

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, combine the buttermilk, egg, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Preheat a non-stick skillet or griddle over medium heat.
  • Pour 1/4 cup of the batter onto the skillet for each pancake.

Cooking

  • Cook until bubbles form on the surface, then flip and cook until golden brown. Each side takes about 2-3 minutes.
  • Serve warm with your favorite toppings.

Notes

For the fluffiest pancakes, let the batter rest for about 5 minutes before cooking. You can add chocolate chips or blueberries as desired. Store leftovers in the fridge for up to 3 days or freeze for up to 2 months.
