Ingredients
  

  • 4 cups fresh strawberries, sliced
  • 1/4 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 cup old fashioned oats
  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 tsp cinnamon

Instructions
 

  • Preheat oven to 375°F (190°C) and grease an 8x8 or 9x9 inch baking dish.
  • Toss sliced strawberries with granulated sugar, cornstarch, and vanilla extract. Spread evenly in the baking dish.
  • In a bowl, combine oats, flour, brown sugar, and cinnamon. Cut in the cold butter until the mixture becomes crumbly.
  • Sprinkle the crumble mixture evenly over the strawberries.
  • Bake for 35–40 minutes until the topping is golden brown and the filling is bubbling.
  • Let cool slightly before serving. Serve warm, optionally with vanilla ice cream.

Notes

Let the crisp rest for 10 minutes before serving to allow the filling to thicken. This topping also works beautifully with peaches or blueberries.
