For the Chicken

  • 4 pieces chicken breasts Feel free to use chicken thighs for a juicier cut.
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian herbs
  • 1 cup chicken broth

For the Potatoes

  • 1 pound baby potatoes, halved Can substitute with sweet potatoes for a different twist.
  • 1 cup grated Parmesan cheese Can be substituted with dairy-free option if desired.
  • to taste garnish Fresh parsley For garnish.

Preparation

  • In a crockpot, combine the chicken breasts, minced garlic, Italian herbs, chicken broth, salt, and pepper. Mix everything together to ensure the chicken is evenly seasoned.
  • Add the halved baby potatoes on top of the chicken.
  • Cover and cook on low for 6-8 hours or until the chicken is tender and fully cooked, checking occasionally.
  • Stir in the grated Parmesan cheese during the last 30 minutes of cooking.
  • Serve garnished with fresh parsley.

Notes

For best results, marinate the chicken in garlic and herbs for a couple of hours before placing it in the crockpot. Leftovers can be stored in an airtight container in the fridge for up to 4 days or frozen for up to 3 months.
