For the mascarpone mixture

  • 8 ounces mascarpone cheese (softened)
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon

For the assembly

  • 1 cup brewed coffee, cooled
  • 1 tablespoon coffee liqueur (optional) Optional for added flavor
  • 12-15 pieces gingerbread cookies (store-bought or homemade)
  • Cocoa powder for dusting

Preparation

  • In a mixing bowl, combine mascarpone cheese, heavy cream, powdered sugar, vanilla extract, ginger, and cinnamon. Whip until smooth and creamy, being careful not to overmix.
  • In a shallow dish, mix the brewed coffee with the coffee liqueur, if using.
  • Briefly dip each gingerbread cookie in the coffee mixture, ensuring they don’t become too soggy.
  • Layer the soaked cookies in a serving dish or individual cups, followed by a layer of the mascarpone mixture.
  • Repeat layers of cookies and mascarpone until the dish is full, finishing with the mascarpone layer on top.
  • Cover and refrigerate for at least 4 hours, or overnight for more developed flavor.
  • Before serving, dust the top with cocoa powder.

Notes

For the best results, whip your cream separately until stiff peaks form, then fold it gently into the mascarpone mixture. Add a pinch of nutmeg or cloves for an enhanced flavor profile. Consider using dairy-free cream or gluten-free gingerbread cookies to accommodate different dietary needs. Store leftovers in an airtight container in the refrigerator for up to 3 days, best served chilled.
