Ingredients

For the Salad

  • 1 whole ripe pineapple, peeled, cored, and cut into rings
  • 2 cups mixed salad greens
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 whole avocado, sliced
  • 1/4 cup walnuts or pecans, chopped

For the Dressing

  • 1/4 cup coconut yogurt or dairy-free yogurt
  • 1 whole Juice of 1 orange
  • 1 whole Juice of 1 lime
  • 1 tablespoon honey or maple syrup (optional)
  • to taste Salt and pepper

Instructions

Preparation

  • Preheat your grill to medium-high heat.
  • Grill the pineapple rings for about 3-4 minutes on each side until grill marks appear and the pineapple is slightly caramelized.
  • In a bowl, mix the coconut yogurt, orange juice, lime juice, honey (if using), salt, and pepper to make the creamy dressing.
  • In a large salad bowl, combine the salad greens, grilled pineapple, red onion, cilantro, avocado, and nuts.
  • Drizzle the creamy citrus dressing over the salad and toss gently to combine.
  • Serve immediately and enjoy the flavors!

Notes

For best results, let the grilled pineapple cool slightly before adding it to the salad to enhance its flavor. Experiment with different greens like spinach or arugula for a new twist. If you're looking for a heartier option, add grilled chicken or shrimp to make it a complete meal. For a dairy-free alternative, stick with coconut yogurt, or try using a tahini-based dressing for a nutty flavor. Leftovers can be stored in an airtight container in the fridge for up to 3 days, but keep the dressing separate until ready to serve.
