Ingredients
  

Main Ingredients

  • 2 cups gluten-free rolled oats
  • 1/2 cup peanut butter or any nut/seed butter
  • 1 1/4 cups mashed banana about 3 large ripe bananas
  • 1/4 cup shredded zucchini moisture squeezed out
  • 1/2 cup chocolate chips

Optional

  • 1 tsp vanilla extract
  • pinch of baking powder
  • pinch of salt

Instructions
 

  • Preheat oven to 350°F (180°C). Line an 8×8-inch pan with parchment paper.
  • In a large mixing bowl, combine oats, peanut butter, mashed banana, and any optional ingredients. Mix until well combined.
  • Fold in chocolate chips and squeezed zucchini until evenly distributed.
  • Transfer batter to prepared pan and spread evenly using a rubber spatula. Top with extra chocolate chips if desired.
  • Bake for 18-25 minutes, or until a toothpick inserted in center comes out clean.
  • Cool completely in pan before cutting into 8 bars.

Notes

These bars are flourless, naturally sweetened, and freeze well for up to 2 months. For best results, use very ripe bananas and squeeze excess moisture from the zucchini. Optional spices like cinnamon or a sprinkle of protein powder can be added for extra flavor and nutrition.
