  • 1 cup canned pumpkin puree Choose pure pumpkin, not pie filling
  • 1 cup rolled oats
  • 1/2 cup chocolate chips Optional
  • 1/2 cup almond milk Or any dairy-free milk
  • 1/4 cup maple syrup Or your preferred sweetener
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla extract

Preparation

  • Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  • In a large bowl, mix together the pumpkin puree, almond milk, maple syrup, and vanilla extract until well combined.
  • In another bowl, combine the rolled oats, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; it’s okay if the batter is a bit lumpy.
  • Fold in the chocolate chips if you’re using them, ensuring they are evenly distributed.
  • Pour the batter into the prepared muffin tin, filling each cup about 3/4 full to allow for rising.

Baking

  • Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

To ensure your muffins are perfectly moist, measure the pumpkin accurately; too much can lead to sogginess. For additional texture, consider adding chopped nuts or dried fruit.
