Ingredients

  • 2 pounds carrots
  • 3 tablespoons olive oil
  • 2 tablespoons honey runny honey works best

Seasoning & Garnish

  • 4 cloves garlic minced
  • 2 teaspoons dried thyme
  • salt and black pepper to taste
  • 1 tablespoon fresh parsley chopped, for garnish
  • 1/2 lemon juice optional, for bright finish

Instructions
 

  • Preheat oven to 400°F (205°C).
  • Wash and peel carrots. Cut into uniform 1.5–2 inch diagonal pieces.
  • In a large bowl, combine carrots with olive oil, honey, minced garlic, thyme, salt, and pepper.
  • Toss until carrots are evenly coated with the glaze and seasoning.
  • Spread carrots in a single layer on a large, rimmed baking sheet. Do not overcrowd.
  • Roast for 30–40 minutes, tossing halfway through, until carrots are tender and edges are caramelized.
  • Remove from oven and transfer to a serving dish.
  • Optionally, squeeze lemon juice over the carrots for a fresh, bright finish.
  • Sprinkle with fresh chopped parsley before serving.

Notes

Use a good-quality honey for best flavor. Avoid overcrowding on the baking sheet to allow for caramelization. Maple syrup can be substituted for honey to make this dish vegan.
