Ingredients
  

For the Salad

  • 4 cups fresh broccoli florets
  • 2 Honeycrisp apples diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup dried cranberries
  • 1/2 cup sunflower seeds
  • 1/2 cup crispy bacon bits optional

For the Dressing

  • 1/2 cup Greek yogurt
  • 2 tbsp apple cider vinegar
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • to taste salt and black pepper

Instructions
 

  • Blanch broccoli florets in boiling water for 2 minutes, then immediately transfer to ice water to stop cooking.
  • Drain broccoli and pat completely dry.
  • In a large bowl, combine broccoli, diced Honeycrisp apples, red onion, dried cranberries, and sunflower seeds.
  • Whisk together all dressing ingredients until smooth and creamy.
  • Pour dressing over salad and toss gently to coat.
  • If using bacon, sprinkle on top just before serving.
  • Chill for at least 30 minutes to allow flavors to meld.

Notes

For a vegetarian version, replace bacon with roasted pecans. For a protein boost, add grilled chicken or tofu.
