Ingredients
For the Salad

fresh broccoli florets

Honeycrisp apples
diced
1/2
cup
red onion
finely chopped
1/2
cup
dried cranberries
1/2
cup
sunflower seeds
1/2
cup
crispy bacon bits
optional
For the Dressing
1/2
cup
Greek yogurt
2
tbsp
apple cider vinegar

tbsp
honey

tbsp
Dijon mustard
to taste
salt and black pepper
Instructions
Blanch broccoli florets in boiling water for 2 minutes, then immediately transfer to ice water to stop cooking.
Drain broccoli and pat completely dry.
In a large bowl, combine broccoli, diced Honeycrisp apples, red onion, dried cranberries, and sunflower seeds.
Whisk together all dressing ingredients until smooth and creamy.
Pour dressing over salad and toss gently to coat.
If using bacon, sprinkle on top just before serving.
Chill for at least 30 minutes to allow flavors to meld.
Notes
For a vegetarian version, replace bacon with roasted pecans. For a protein boost, add grilled chicken or tofu.
