Ingredients
  

  • 4 oz cream cheese, softened
  • 4 tbsp unsalted butter, softened
  • 1 tsp vanilla extract
  • 4 cups powdered sugar
  • 2.5 cups sweetened shredded coconut
  • 2 tbsp ground cinnamon (for rolling)

Instructions
 

  • In a large bowl, beat the softened cream cheese and butter together until smooth and fluffy. Mix in the vanilla extract.
  • Gradually beat in the powdered sugar, one cup at a time, until fully incorporated and thick.
  • Stir in the shredded coconut until evenly distributed throughout the mixture.
  • If the mixture is too soft to shape, refrigerate for 30 minutes to make handling easier.
  • Scoop about 1 tablespoon of the mixture and roll into small oval potato shapes. Roll each piece in ground cinnamon until coated.
  • Place candies on a parchment-lined tray and refrigerate for at least 1 hour before serving.

Notes

These candies firm up best after chilling. Store refrigerated until ready to serve for the most realistic texture and appearance.
