Ingredients
  

For the Chicken

  • 2 cups cooked shredded chicken
  • 1 cup BBQ sauce (keto-friendly) Use your favorite keto-friendly BBQ sauce.
  • 1/2 cup cooked and crumbled bacon

For the Casserole

  • 1 cup cream cheese Ensure cream cheese is at room temperature.
  • 1 cup shredded cheddar cheese (divided use) Reserve half for topping.
  • 1/2 cup diced onion
  • 1/2 teaspoon garlic powder
  • to taste Salt and pepper Adjust according to preference.
  • Chopped green onions for garnish (optional)

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, mix together the shredded chicken, BBQ sauce, cream cheese, half of the cheddar cheese, crumbled bacon, diced onion, garlic powder, salt, and pepper. Stir until all the ingredients are well combined.

Baking

  • Transfer the mixture to a greased baking dish and spread it evenly.
  • Top with the remaining cheddar cheese.
  • Bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
  • Remove from the oven and let it cool slightly.
  • Garnish with chopped green onions if desired, and serve hot.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. You can also freeze the casserole for up to 3 months. To reheat, thaw overnight in the refrigerator, then warm in the oven at 350°F (175°C) for about 20 minutes or until heated through.
