For the mousse

  • 1 cup heavy cream (use cold for better whipping) Use cold for better whipping results.
  • 1/2 cup unsweetened cocoa powder
  • 1/3 cup powdered erythritol (or other keto-friendly sweetener) Can substitute with stevia.

Preparation

  • In a medium bowl, whip the heavy cream using an electric mixer until it forms stiff peaks. This might take about 2-3 minutes.
  • Gradually add the unsweetened cocoa powder and powdered erythritol while continuing to whip until everything is well combined and smooth.
  • Serve immediately for a light, airy mousse or chill in the refrigerator for about 30 minutes for a firmer consistency.

Notes

For the best results, ensure your heavy cream is cold before whipping. Adding a teaspoon of vanilla extract can enhance the flavor. Store any leftover mousse in an airtight container in the refrigerator for up to 3 days. Freezing is not recommended as it may change the texture.
