Ingredients
  

For the Meatballs

  • 1 lb ground beef (or ground turkey) Use 80/20 ground beef for best texture.
  • 1/4 cup grated Parmesan cheese Omit for dairy-free option.
  • 1/4 cup almond flour
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper

For the Sauce

  • 4 tablespoons butter Use dairy-free butter substitute for dairy-free option.
  • 2 cloves garlic, minced
  • 2 tablespoons chopped parsley For garnish.

Preparation

  • Preheat your oven to 400 degrees F (200 degrees C).
  • In a large bowl, combine the ground beef, Parmesan cheese, almond flour, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined; don’t overmix to keep the meatballs tender.
  • Form the mixture into small meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper for easy cleanup.

Baking

  • Bake the meatballs in the preheated oven for about 15-20 minutes until cooked through and golden brown.

Saucing

  • In a skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  • Add the cooked meatballs to the skillet and toss to coat them in the garlic butter sauce, letting them cook for another 2-3 minutes until evenly coated.
  • Garnish with chopped parsley and serve warm.

Notes

Store leftover meatballs in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months. To reheat, place them in a microwave-safe dish or skillet over medium heat until warmed through.
