Ingredients
  

For the Beef Base

  • 1 lb ground beef 80/20 preferred
  • 1 tablespoon olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1/2 cup beef broth

Seasonings

  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon red pepper flakes optional
  • salt and pepper

Veggies & Cheese

  • 3 cups broccoli florets bite-sized
  • 1 cup cheddar cheese shredded
  • 4 oz cream cheese cut into chunks

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat. Add ground beef and brown it, breaking it up with a wooden spoon.
  • Once beef is about 80% cooked, add diced onion and cook 2–3 minutes until softened. Add minced garlic and cook 30 seconds more.
  • Season with Italian seasoning, smoked paprika, red pepper flakes (if using), salt, and pepper. Stir to combine.
  • Deglaze skillet with beef broth, scraping up any browned bits. Stir in broccoli florets until coated.
  • Cover skillet and simmer over medium-low heat for 5–7 minutes, until broccoli is tender-crisp.
  • Add cream cheese in chunks around the skillet. Let melt for 1–2 minutes, then gently stir until creamy and combined.
  • Sprinkle cheddar cheese over top. Cover for 1–2 minutes until melted. Remove from heat and serve warm.

Notes

Use frozen broccoli if needed, but add it later to avoid overcooking. For extra fat, stir in butter or top with avocado. Customize with other low-carb veggies or switch to sausage for variety.
