For the Zucchini Fries

  • 2 medium zucchinis Cut into fry shapes.
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese Can substitute with nutritional yeast for a dairy-free option.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper To taste.
  • 1 large egg Beaten.

Preparation

  • Preheat your oven to 425°F (220°C).
  • Cut the zucchinis into fry shapes, aiming for uniform sizes for even cooking.
  • In a bowl, mix together the almond flour, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  • In another bowl, beat the egg until well mixed to help the coating stick.
  • Dip each zucchini stick in the egg, allowing excess to drip off, then coat it in the almond flour mixture.
  • Place the coated zucchini fries on a baking sheet lined with parchment paper, ensuring they are spaced out for even cooking.

Baking

  • Bake for 20-25 minutes until golden and crispy, turning them halfway through for even browning.
  • Enjoy warm as a delicious side or snack.

Notes

For best results, ensure zucchinis are not too watery; you might want to pat them dry before coating. You can also use an air fryer at 375°F (190°C) for about 10-12 minutes.
