  • 2 medium zucchinis, grated Ensure to squeeze out excess moisture.
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 large egg, beaten
  • 1 stalk green onion, chopped
  • Oil for frying Use enough oil to cover the bottom of the pan.

Preparation

  • Grate the zucchinis using a box grater or food processor. Place them in a kitchen towel and squeeze out excess moisture.
  • In a mixing bowl, combine the grated zucchini, flour, cornstarch, salt, pepper, beaten egg, and chopped green onion. Mix until well incorporated.

Cooking

  • Heat a generous amount of oil in a skillet over medium heat.
  • Drop spoonfuls of the zucchini mixture into the hot skillet, flattening them slightly to form patties. Avoid overcrowding the pan.
  • Fry the fritters for about 3-4 minutes on each side or until golden brown.
  • Serve hot, paired with a savory dip of your choice.

Notes

For best results, ensure the zucchini is dry. You may add red pepper flakes or chopped jalapeƱos for heat. Use chickpea flour for a gluten-free option. They freeze well for up to 2 months.
