Ingredients
  

  • 16 oz coleslaw mix (or shredded cabbage)
  • 2 large firm mangos, julienned
  • 1/2 red onion, thinly sliced
  • 1/2 cup fresh cilantro, chopped
  • 1 jalapeño, minced
  • 1/4 cup lime juice
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1/2 tsp ground cumin

Instructions
 

  • Whisk together lime juice, olive oil, honey, and cumin until fully emulsified.
  • In a large bowl, combine coleslaw mix, mango, red onion, cilantro, and jalapeño.
  • Pour the dressing over the slaw and toss gently to coat evenly.
  • Let the slaw rest for 15 minutes to allow the flavors to meld.
  • Serve chilled as a refreshing side dish.
