Mediterranean Ground Beef Stir Fry

A vibrant and quick one-pan Mediterranean stir fry made with lean ground beef, colorful vegetables, warm spices, and finished with lemon, olives, and feta. A 30-minute healthy dinner winner!

Ingredients
  

For the Stir Fry

  • 1 lb lean ground beef
  • 1 red bell pepper diced
  • 1 zucchini cut into quarter moons
  • 1 red onion thinly sliced
  • 1 cup cherry tomatoes halved
  • 2 cups fresh spinach
  • 3 cloves garlic minced
  • 2 tbsp olive oil

For Seasoning

  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1/2 tsp dried rosemary
  • 1/4 tsp red pepper flakes
  • salt and black pepper to taste

For Garnish

  • 1 tbsp fresh lemon juice
  • 1/2 cup feta cheese crumbled
  • 1/4 cup Kalamata olives chopped
  • 2 tbsp fresh herbs parsley, mint, or dill

Instructions
 

  • Heat a large skillet or wok over medium-high heat. Add 1 tbsp olive oil. Once hot, add ground beef, season with salt and pepper, and cook for 5-7 minutes until browned. Transfer beef to a plate with a slotted spoon.
  • In the same pan, add another drizzle of olive oil if needed. Sauté red onion for 2 minutes until softened.
  • Add bell pepper and cook for 3 minutes. Then add zucchini and sauté for 2-3 more minutes until tender-crisp.
  • Stir in garlic and cook for 30 seconds, until fragrant.
  • Sprinkle in oregano, cumin, rosemary, red pepper flakes, salt, and black pepper. Stir to coat vegetables evenly.
  • Return cooked ground beef to the pan and mix with the veggies. Add cherry tomatoes and cook for 2 minutes.
  • Add spinach and stir until just wilted, about 1 minute. Remove from heat.
  • Finish with fresh lemon juice, then garnish with crumbled feta, Kalamata olives, and fresh herbs. Serve immediately.

Notes

For meal prep, chop all the veggies and cook the beef in advance. Store leftovers in the fridge for up to 4 days. Add toppings fresh after reheating for best flavor.
