Melting Sweet Potatoes with Maple Pecan Sauce (Thanksgiving Favorite!)

Ingredients
  

  • 2 pounds fresh sweet potatoes (orange variety)
  • 4 tablespoons unsalted butter
  • 1/2 teaspoon salt
  • 1/2 cup pure maple syrup
  • 1/2 cup chopped pecans

Instructions
 

  • Preheat your oven to 425°F (220°C). Prepare a roasting pan for the sweet potatoes.
  • Peel and slice sweet potatoes into 1-inch thick rounds. Arrange in a single layer on the roasting pan, leaving space between slices.
  • Melt butter and drizzle over sweet potatoes. Sprinkle with salt (adjust depending on whether using maple sauce). Toss to coat and redistribute evenly in one layer.
  • Roast for 20 minutes until the bottoms are golden and crispy.
  • Flip each slice and roast another 20 minutes until both sides are golden brown and centers are fluffy.
  • In a small saucepan, bring maple syrup to a boil. Add chopped pecans and return to a boil for 1 minute. Remove from heat.
  • Transfer sweet potatoes to a serving platter. Drizzle with warm maple pecan sauce or serve plain.
