This Mummy Meatloaf is the ultimate spooky centerpiece for Halloween dinner! A juicy, flavorful homemade meatloaf is wrapped in golden puff pastry 'bandages' with olive eyes for a festive and delicious main course kids and adults will love.
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, gently combine ground beef, breadcrumbs, eggs, onion, garlic, 1/2 cup ketchup, salt, pepper, and oregano. Do not overmix.
Shape mixture into a loaf on the prepared baking sheet. Spread a thin layer of ketchup on top. Bake 40–45 minutes.
While baking, cut thawed puff pastry into long thin strips (1/2–3/4 inch wide).
Remove meatloaf from oven. Wrap with pastry strips in a crisscross mummy pattern, leaving a space for the eyes.
