No Bake Cookie Overnight Oats

A healthy, satisfying, and indulgent breakfast that tastes just like a classic chocolate and peanut butter no-bake cookie. Packed with oats, peanut butter, cacao, and chia seeds, it’s creamy, chocolatey, and ready-to-eat in the morning with zero cooking required.

Ingredients
  

  • 1/2 cup old-fashioned rolled oats
  • 1 tbsp natural creamy peanut butter
  • 1-2 tsp pure maple syrup (or honey, if not vegan)
  • 1 tsp cacao powder (or unsweetened cocoa powder)
  • 1 tsp pure vanilla extract
  • 1 tsp chia seeds
  • 1/2 to 2/3 cup plant-based milk (almond, cashew, oat, etc.)
  • 1 pinch sea salt
  • mini chocolate chips
  • warm drizzle of peanut butter

Instructions
 

  • In a mason jar, glass, or small bowl with lid, combine rolled oats, peanut butter, maple syrup, cacao powder, vanilla, chia seeds, milk, and salt.
  • Stir very well until fully combined, smooth, and oats are submerged in liquid.
  • Cover and refrigerate overnight (at least 8 hours) to let oats and chia seeds absorb liquid and thicken.
  • In the morning, stir well. If too thick, add a splash of milk. Top with mini chocolate chips and a drizzle of peanut butter if desired.

Notes
