For the Bread

  • 3 pieces eggs
  • 2 cups sugar
  • 3/4 cups vegetable oil
  • 2 cups flour
  • 1/2 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 3 teaspoons cinnamon
  • 2 cups zucchini (grated) Make sure to squeeze out excess moisture
  • 3 teaspoons vanilla extract
  • 1 cup pecans (chopped)
  • 1/2 cup raisins

Preparation

  • Preheat your oven to 350°F and grease and flour a bundt pan (or use non-stick baking spray).
  • In a large mixing bowl, combine the eggs, sugar, and oil. Mix on medium-low speed until blended and fluffy.
  • Gradually add flour, baking powder, baking soda, salt, and cinnamon. Mix until just combined.
  • Squeeze excess moisture from the grated zucchini using a towel, then mix in the zucchini and vanilla extract.
  • Fold in chopped pecans and raisins.

Baking

  • Pour the batter into the prepared bundt pan and bake for 45 minutes.
  • Check for doneness by inserting a toothpick into the center; it should come out clean.

Notes

For a different flavor, add chocolate chips or walnuts. Store in an airtight container for up to 3 days or freeze for up to two months.
