Ingredients
  

For the Casserole

  • 10 large large eggs
  • 2 cups milk
  • 1 pound spicy sausage For a milder flavor, use regular sausage.
  • 3 cups hash brown potatoes
  • 2 cups shredded cheese Cheddar or a cheese blend.
  • 1 bell pepper, diced
  • 1 onion, diced
  • Salt and pepper to taste
  • Hot sauce (optional) Serve on top for an extra kick!

Preparation

  • In a skillet, cook the spicy sausage over medium heat until browned. Add the diced bell pepper and onion, cooking until softened, about 5 minutes.
  • In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  • In a greased baking dish, layer the hash browns, cooked sausage mixture, and cheese. Pour the egg mixture over the top, ensuring everything is evenly distributed.
  • Cover with foil and refrigerate overnight; this allows the flavors to meld beautifully.

Cooking

  • Preheat the oven to 350°F (175°C) the next morning.
  • Bake, covered, for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until set and golden brown on top.
  • Serve warm, topped with optional hot sauce for an extra kick!

Notes

Great for meal prep; store leftovers in an airtight container for up to 4 days or freeze for 2 months. Reheat in the microwave or oven.
