Ingredients
  

For the Salmon

  • 4 pieces salmon fillets Fresh, skinless fillets recommended.
  • Salt and pepper to taste For seasoning.
  • 2 tablespoons olive oil Used for pan searing.

For the Sauce

  • 1 cup heavy cream For a rich sauce.
  • 1/2 cup grated Parmesan cheese Adds creaminess to the sauce.
  • 1/2 cup sun-dried tomatoes, chopped Provides added flavor.
  • 2 cups fresh spinach Will wilt in the sauce.
  • 2 cloves garlic, minced For flavor.

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Season the salmon fillets with salt and pepper.
  • Pan sear them for about 5-6 minutes on each side or until cooked to your liking.
  • Remove the salmon from the skillet and set aside.

Cooking the Sauce

  • In the same skillet, add the minced garlic and sauté until fragrant, about 1 minute. Be careful not to burn the garlic.
  • Stir in the heavy cream and bring it to a simmer.
  • Add the grated Parmesan cheese, mixing until it melts and the sauce is smooth, about 2 minutes.
  • Add the chopped sun-dried tomatoes and fresh spinach to the sauce, stirring until the spinach wilts, about 2 minutes.
  • Place the salmon back in the skillet, spooning the creamy sauce over the fillets to ensure they are well coated.

Serving

  • Serve hot, garnished with additional Parmesan if desired.

Notes

For creamier sauce, add a tablespoon of butter with the cream. You can use coconut cream as a dairy-free option or Greek yogurt for a lighter version. Air fryer option available.
