Ingredients
  

For the Margarita

  • 1 tsp agave syrup
  • 1 tbsp fine sea salt
  • 1/2 lime Zest of 1/2 lime For rimming the glass
  • Ice For serving
  • 1.5 oz tequila (blanco or reposado)
  • 0.5 oz coconut liqueur (or Cointreau, coconut rum works well too)
  • 1 oz freshly squeezed lime juice For best flavor use fresh
  • 2 oz pineapple juice
  • 1/4-1/2 oz agave syrup (or simple syrup) Adjust to taste
  • 1 oz canned coconut milk (or 1/2 oz coconut cream) Use a handheld milk frother if too thick

For Garnish

  • 1 pineapple wedge
  • 1 lime slice
  • 1 pineapple leaf (optional)

Instructions
 

Preparation

  • Brush the rim of your glass with agave syrup and set it aside.
  • On a small plate, mix together the sea salt and lime zest. Dip the glass into this mixture to coat the rim.
  • Fill the glass with ice and set it aside.

Mixing

  • In a cocktail shaker, combine the tequila, coconut liqueur, lime juice, pineapple juice, agave syrup, and coconut milk.
  • If the coconut milk is too thick, use a handheld milk frother to blend it in before adding ice.
  • Add a handful of ice to the shaker and shake vigorously for a few seconds until well mixed.

Serving

  • Strain the mixture into the prepared glass filled with ice.
  • Garnish with a wedge of pineapple and a slice of lime.

Notes

For best flavor, always use fresh lime juice! Adjust sweetness with agave syrup to your taste preferences. For a lighter drink, use soda water instead of coconut milk.
